| Extra soft and fluffy doughnuts |
Ingredients
All purpose flour/ bread flour - 3cups + extra for kneading
Instant yeast - 1sachet(10grams)
Unsalted butter - 4tbsps
Egg - 1large
Honey/sugar - 5tbsps
Nutmeg - 1/2tsp(optional)
Warm water/ milk - 1cup/ 500ml (use in bits)
Oil - for frying
Method
- Melt the butter and cool it
- Add sugar + egg and mix thoroughly until all sugar is dissolved
- Add half cup of milk/water and stir in well
- Sift flour (All 3 cups) + yeast + nutmeg and begin to mix
- When roughly mixed, move the dough to a clean surface and knead from there, adding a little water/milk at a time till you achieve a soft but not sticky dough.
- Oil the dough by just applying some on your palm and smearing around the dough.
- Put it in a container, big enough, and cover with cling film or a lid.
- Put it in a warm area for 1hr or 1.5hrs so it can rise and double in size
- Remove and knead lightly to seal off the air in the dough
- Dust your working space where you'll arrange your doughnuts.
- Roll out the dough to 1/2inch thickness, use a tumbler or glass or circular cutter of your desired diameter to cut out the circles, use a smaller diameter for the inside hole (use a bottle mouth).
- Cover your doughnuts and let them rise again, double in size (about 10 to 15mins)
- Heat up your oil on medium low heat so that the doughnuts don't burn.
- When hot (not smoky hot) dip in your doughnuts and don't crowd them.
- As soon as it begins to puff flip it ( this avoids cracks or holes in your doughnuts)
- Keep flipping each side till golden brown, take it out and let them cool on a rack
Note: I divided my dough into two so that I could space out my doughnuts well to rise. Cooked the first batch, turned of the heat to fix the second batch and repeated the process.
