Ingredients
Pork - 1/2kg
Pumpkin - 1/2kg
French beans - handful (cut in equal length - finger length)
Carrots - 2large(juliened)
Tomato - 3medium size(ripened)
Tomato paste - 1tbsp
Garlic - 2pieces(minced)
Ginger - thumbnail size(minced)
Garam Masala - 1tsp
Coconut oil - 1tsp
Salt - to taste
Water.
Method
For the Pork Sauce
- Cut pork to desirable pieces, washed and added a little water (75ml) to steam with it till it dries off and begins to cook using it's oil till browned.
- Add onions, garlic+ginger+garam masala and stir in till onion is transluscent.
- Blend tomatoes + tomato paste with very little water and add to it.
- Add salt and stir.
- Reduce your heat to low and cook for about 10mins or the sauce is thick enough to your desire.
For the Pumpkin
- Wash and cut in desirable shapes.
- Put in a cooking pot, add water to slightly cover the Pumpkin.
- Sprinkle some salt and cook on medium heat.
- Check for doneness between 10 -15mins. Serve when done(soft)
- You can eat it peeled or with skin.
For the French beans and carrots
- Bring 500ml of water to a boil.
- Add salt.
- Add French beans and carrots
- Blanch uncovered for about 5mins(or when done - test with a fork)
- drain the water, run them in cold water, drizzle coconut oil, mix in and serve.
