Garden egg/ eggplant/ aubergine stew



Ingredients

Egg plants - 6small size cut in tiny cubes
Smoked salmon - 1large (any other fish is okay)
Egg - 3boiled(optional)
Onion - 2 medium(grate one chop one finely)
Tomatoes - 5small size ripened(grate or blend)
Ginger - thumb size (minced)
Garlic - 3small pieces(crashed)
Habanero pepper - 1 (crashed)
Tomato paste - 1tbsp
Garam masala - 1/2tsp
Coriander seeds - 1/4 tsp
Fennel seeds - 1/4 tsp
Red palm oil(zomi preferably) - 2tbsps
Salt - to taste 

NB: use spices readily available to you.

Method

- Cook the garden eggs to tenderness, drain water and set aside.
- Heat up cooking pan with palm oil on medium heat. Add chopped onions and cook till translucent, add coriander seeds and fennel seeds cover and let cook for a few minutes.
- Add garam masala, ginger, garlic, grated onions and stir in.
- Add tomatoes and tomato paste, stir in, lower heat, cover and let cook for a few minutes.
- Add salt, garden egg and stir.
- Add boiled eggs and fish, stir then cover and allow it to cook for at least 10minutes.

Serve with boiled plantain, arrow roots, yam or ugali if you like.
