Ingredients
Beef - 1/2kg
Groundnut paste/ peanut butter - 2tbsps
Onion - 2medium size( one onion minced)
Green onion/spring onion - 1/2handful (diced)
Tomato - 5ripened(blended)
Ginger - thumbnail size (minced)
Garlic - 6pieces(minced and divided into half)
Green pepper/bell pepper - 2medium size
Carrot - 1large(juliened)
Green beans - 1/2handful
All spice(whole) - 1/4tsp
Koshering salt - 1/4tsp
Cumin seeds - 1/4tsp
Unsalted butter - 1tsp
Red ground pepper - 1/2tsp
Turmeric - 1/2tsp(optional)
Gharam masala - 1/4tsp(optional)
Method
Part One: Steaming the beef(skip if your beef is soft and tender)
- Wash beef and put it whole in a cooking pot
- Add minced onion+ginger+1/2garlic+koshering salt+cumin+all spice
- Add a little water, about quarter way, and cook on medium heat till soft
- Cut in desired sizes when done.
Part Two: The Sauce
- Melt butter in a non stick pan on medium heat and add your beef and the other 1/2minced garlic. Mix well.
- Add red ground pepper+gharam masala+turmeric and stir in well.
- Add green bell pepper +green onions and stir.
- Add blended tomatoes and lower the heat.
- Mix the groundnut paste with 1/4cup of water and add to it.
- Check for salt and adjust if needed.
Meanwhile...
- Put 1 and 1/2 cups of water in a pot and bring it to a boil.
- Add 1/2tsp of salt to the water followed by green beans.
- Cook till slightly soft then add carrots and blunch for a few minutes.
- Drain out the water and run the beans and carrots in cold water(stops the cooking process and keeps the beans green)
Part Three: Finally
- Add the beans and carrots to the beef sauce and cook for a few more minutes.
Serve as desired.
