Onion Bhajia





Ingredients

Gramflour(besan/chickpea flour) - 1cup
All purpose flour - 2tbsps
Baking powder - 1/2 tsp
Turmeric powder - 1/2tsp (optional)
Cumin powder/seeds - 1tsp
Red ground chillies/whole chillies - 1tsp (adjust to taste/optional)
Sweet onion - 1large(cut into rings)
Spring onions - 1/2cup (chopped)
Coriander leaves - 1/4cup(chopped)
Garlic - 2medium sized pieces(minced)
Salt - 1/2tsp
Water - 500ml
Oil - 1litre

NB: adjust the recipe to accommodate number of persons being served.


Method

-Sift all the dry ingredients into a bowl. That is gramflour+all purpose flour+baking powder+turmeric powder+cumin powder+red ground chillie powder+salt. Mix well and set aside.
-To the dry ingredients add water bit by bit to make a smooth paste. It shouldn't be runny(watery) and not to thick either. Beat the batter till there is no lumps.
-To the batter add spring onions+coriander+garlic and mix it well. You can taste for salt and chillies and make adjustments if need be.
-Add sweet onion rings to the batter and mix well using clean hands or a wooden laddle.
-Heat up oil in a cooking pan/wok on medium heat. Scoop a but of batter on your
finger tip and drop in the oil to taste for readiness. If it comes up immediately with bubbles then the oil is ready
-Scoop some batter with onion ring into the hot oil. Do as many scoops as can fit in the pan but don't crowd them
-Flip it after a minute then keep flipping from time to time till the bhajia is cooked/golden brown in colour. Remove from oil using a slotted spoon and put on a kitchen napkin or strainer to drain off excess oil.

Serve with a sauce or drink of choice
