Garlic-honey glaze chicken


Ingredients

Chicken (soft) - 1/2kg cut in chunks
All purpose flour - 1/4cup
Baking powder  - 1/2 teaspoon
Seasoning salt - 1/2 teaspoon
Egg - 2small size or 1 large
Red ground pepper - 1/2teaspoon or more (optional)
Chicken mix - 1teaspoon
Cooking oil - 1 litre(For frying)
Thyme - 1/2 teaspoon
Garlic - 5medium size pieces minced/crushed
Honey - 2-3 tablespoons
Habanero pepper - 2pieces for extra heat (optional)
Coconut oil - 2 tablespoons


Method

Part One
- Wash chicken well and patt dry with a clean kitchen napkin.
- In a mixing bowl the dry ingredients (all purpose flour, baking powder, salt, red ground pepper and chicken mix. Stir with a spoon till well mixed.
- Add the eggs one after the other and with bare hands (should be clean) or a laddle mix well.
- Add the chicken chunks to the mixture and ensure they are well covered in the mixture.
- You can cover with cling film and leave it refrigerated till the next day or set it on the kitchen counter for an hour.

Part Two
- Heat up oil and put in the chicken chunks using your hands, one after the other.
- Remove when lightly browned.
- Reheat the oil and deep fry the chicken a second time for extra crunchiness/crispness.
-Remove the chicken when golden brown and set aside.

Part Three
- Put two tablespoons of coconut oil in a non stick pan on medium heat.
- Add the garlic, habanero and thyme. Don't let the garlic burn.
- Add honey and stir well for the flavours to combine well.
- Add the chicken pieces and mix well.

Serve as desired.

Served with pilau rice and tomato stew.
